Strawberry Jelly Cake
Preheat the oven to 180°C. Grease and flour three (8- or 9-inch) cake pans with baking spray. Sift the 3 cups of cake flour and baking powder in a medium mixing bowl. Stir in the salt to combine. Combine the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl using an electric mixer. Beat on medium for 4 minutes, or until light and fluffy.
Beat the eggs one at a time until each is fully incorporated before adding the next. Pour in the vanilla extract. Reduce the mixer speed to low and add the flour mixture and milk, one-third at a time, until both are thoroughly combined. Clean the mixer attachments, the sides, and the bottom of the bowl until the batter is combined. Pour the batter into the cake pans in an even layer. Bake for 25 minutes until the cake is browned on top. Remove the cake pans from the oven and place them on a wire rack to cool.
Allow the cakes to cool in the pans before inverting them onto a rack. Once the cake layers have cooled, place the strawberry jelly in a small bowl and microwave in 10-second increments until the jelly is spreadable. Place a cake layer on the serving dish, then top with 12 cups of jelly. Pour more jelly over the top of the strawberry jelly cake.
Coconut Jelly Cake
Warm oven to 180°C. Prepare a 10-by-2-teaspoon patty pan with cooking spray. Cream butter and sugar with an electric mixer until they are frothy and light. Beat in the egg, a bit at a time, until thoroughly incorporated. Gently fold in half the flour and half the milk using a large spoon.
Repeat using the remaining milk and flour. Pour the mixture into the patty pan. Until a skewer inserted into the center of the dish comes out clean, bake cakes on a wire rack for 15 to 20 minutes to cool. In a bowl, combine jelly and hot water and stir until crystals are broken down. Add cold water and stir.
Keep chilled for an hour or until it’s slightly thick and cold. Put the coconut in a large bowl. Slice each cake horizontally in half. One teaspoon of cream is used to reassemble the halves—lower one cake at a time into the jelly. Remove any excess jelly. Toss the cakes in the coconut until evenly coated. Refrigerate for 30 minutes, or until set, on a lined baking sheet.
Birthday Jelly Cake
Cake pans can be treated with nonstick spray or butter. Put aside. All dry ingredients should be combined in the mixer. For five seconds, blend. Add half the butter pieces and stop the mixer. Add the butter, then the remaining pieces. As you add the eggs, beat each one thoroughly before adding the next while the mixer is still running. First stir in the milk, then seasoning.
Pour the batter into the cake pans after all ingredients have been combined. Bake at 325 for 15 to 20 minutes per layer, or until a toothpick inserted into the center of the layer comes out clean. Let layers cool in the pan before turning them out onto a fresh dish towel or cooling rack. A birthday jelly cake should be unique and beautiful. I suggest covering the birthday jelly cake with various fruits and berries. In this case, your jelly cake will look fresher and more beautiful.
Vanilla Jelly Cake
Grease a 20 cm by 30 cm lamington pan and preheat the oven to 180/160°C (fan forced). Bakeware paper should reach 3 cm above pan edges as you line the base and sides. To create the cake, use an electric mixer to beat margarine, sugar, and vanilla in a big basin until they are light and fluffy. One at a time, beat in eggs until mixed. The mixture at this point could appear curdled.
Sifted flour and milk should be added in two batches and folded until mixed. Pour into the pan that has been prepared. Cook for 25 minutes, or until a skewer inserted in the center of the dish comes out clean. Remove. Wait 10 minutes in the pan. To cool, transfer to a wire rack. In the meantime, melt jelly crystals in a small dish of boiling water. Add cold water and stir. Keep chilled until jelly starts getting edges.
